
Preparing the base of cake is easier than preparing the toppings and properly designing it on the top of the base. So, for this event, I prepared the vegan Swiss meringue buttercream. For the ones who are less sweet-tooth but likes to have mild sweet cakes, this is the best recipe for you. You can prepare a healthy base like the rhubarb cake and have this frosting as the topping for the cake. This not only makes it healthy, but also will suit best to your sweet buds.
This dairy-free, egg-free as well as nut-free frosting will give you a flavory and textured cake. Unlike other frostings, this vegan buttercream frosting doesn’t taste super sugary nor does it taste completely sugar-less. For this, I add aquafaba in my frosting that gives that frosting its required sugar levels and it also works as a vegan alternative to eggs. So it works 2-way round.
How to Make Vegan Swiss Meringue Buttercream Frosting
The icing you get with this recipe is fluffy, light and melts quickly in mouth. While decorating this icing, you can also put over some vegan custard in the center of the icing for different look. There are different ways of preparing this recipe. American way, Italian way, Swiss way, may be more (Can’t be sure). I found Italian way quite difficult to prepare so, I prepare in the following form.

Take a saucepan, keep it on stove top at medium flame
Add chickpeas water and sugar to the pan and now keep it on high flame
Let the mixture boil, till then, beat the Aquafaba with the beater. Keep the speed high for it to get the glossy and thick finish
Now, in another bowl, add cream of tartar with the confectionery sugar, then mix it to the aquafaba cream and stir continuously till the sugar melts
Add the chickpea water mixture to the cream mixture, add shortening, vegan butter, and whipp the entire mixture in high speed with the beater
Now, add the vanilla extract to the cream and you frosting is ready.

You can also use this buttercream frosting to top on your vegan date pudding. And, of course, you can use it over your cupcakes. It tastes great! This entire process all in all takes 15 minutes. No fuss of a lot of cooking or long time. Because of aquafaba, you get this smooth, simple, and delicious recipe.
