Dairy-Free Sugar Cookies

An all time favorite snack at my place and for many other is here. Although this recipe is not that tough, I preferred having this as my recipe in this event because it is super delicious, soft and chewy and loved by my kids. With this dairy-free sugar cookies recipe is gluten-free and vegan too. It cannot be called healthy, but occasional serving of this dessert is a treat for everyone in the family, be it adults or kids.

While you cook this sugar cookies, it shouldn’t be too sweet which is very important. With the perfect taste, you will want to have these dairy-free cookies more than just in holidays. With vanilla extract, you get a sweet and subtle flavor in your cookies. Although preparation of these cookies is super simple like the vegan date pudding, but the dough of this recipe can be a little time taking.

Dairy-Free and Gluten-Free Sugar Cookies Recipe

Like most of the cookies, chilling doesn’t make any difference to these cookies. So, you can just store them in a jar at room temperature. While you prepare these cookies, you will make use of oil like you use in your vegan Irish Soda Bread, you can use neutral oils like canola oil or any vegetable oil. Let’s have a look at the recipe now

Ingredients

  • 2 & ¾ Cup of All-Purpose Flour
  • ½ Tsp of Baking Powder
  • 1 Tsp of Baking Soda
  • 1 & ½ Cup of White Sugar
  • ½ Cup of Salt
  • ¾ Cup of Oil
  • ½ Cups of Quinoa Flakes (Dissolved)
  • 2 Tsp of Vanilla Extract

Directions

Step 1: Take a large bowl and add all the try ingredients like flour, baking powder, baking soda, salt and sugar

Step 2: Mix all the dry ingredients and whisk them carefully

Step 3: Now add all the wet ingredients to the bowl like oil, quinoa flakes and vanilla extract to the mixed dry ingredients

Step 4: Mix all the ingredients using both your hands in a way that the dough looks dry but must be combined

Step 5: Now, make balls from the dough that are around 1-1 and a half inches long. Now, create a space in between the balls using teaspoons and tablespoon to give a unique shape to the dough. If you want to have different shapes, then just press the dough, take moulds of different shapes and tuck them in the dough to form the shape

Step 6: Then, place a parchment paper or any usable baking sheet in the microwave and let it heat for 10 minutes at 350 degrees Fahrenheit

Step 7: Now, put the cookies dough on the bake sheet and let it heat at 350 degrees Fahrenheit for the next 10 minutes

Step 8: Then, remove the cookies and let it cool for next 3 to 5 minutes

You get a number of breads in the market but, nothing beats the once made at home. As the homemade breads can have healthy as well as fresh ingredients. Although there are several brands in the market that provide vegan breads, you cannot get the taste of the non-vegan variety of breads. But, with the following recipe you will definitely not miss out on having your favorite tasting bread.

In this vegan cookie event, I preferred preparing Irish bread instead of some other dessert is because I have seen some of my friends who couldn’t stay put to being vegan as they couldn’t have a vegan bread of their liking. And, I do not want some newly turned vegan to face the same issue and leave the path of veganism.

How to Prepare Vegan Irish Soda Bread

You can then use the bread anytime. Keep it at the room temperature and it will last for around 4-5 days. This is a very nutritious recipe. For a nutritious dessert recipe, try out the vegan buckwheat pancake or the vegan date pudding too.

Vegan Pancake Syrup Recipe

A lot changes while you turn vegan. Honey had a special place in my kitchen because of the number of advantages it offers. But, post turning vegan, I started looking for the alternatives. The closest alternative I found for honey was Maple syrup. I make it at home to have the taste we love to have. You can use this maple syrup in a number recipes including using it as syrup on your pancakes.

This pancake syrup contains low sugar and so has lower amount of calories. This is done by using powdered erythritol in place of sugar. You can have these basic pancakes with the maple syrup for snacks with your tea or coffee or have it at anytime of the day.

How to Prepare Vegan Pancake Syrup

You can pour the hot syrup on pancake or let it cool and then pour. It is your choice; some people like its hot version while some like warm or cold version of it. If your syrup has cooled down, but you want to have it hot, then you can simply keep it in the microwave for a few minutes and let it heat up. You should not reheat it on the stove as that will make the syrup extra sugary and sweet which might not taste well.

From 1 Tsp of this maple syrup, you get approximately 25 Kcal, no fats or cholesterol, Carbohydrates around 8 grams and sugar in the body, around 8 grams. Maple syrup makes your life easier while you turn vegan and crave for various snacks. I pour my maple syrup over my waffles, cooked sweet potatos, ice creams, date pudding, cupcakes, hot cereal, salad dressings, cooked vegetables and many more.

I find maple syrup as the closest, low-fat, low calorie and vegan substitute to honey. You might find a number of maple syrup brands in the market. But, they might not be as healthy as the one you prepare at home with the above recipe. You can use maple syrup along with vegan custard for a number of vegan dessert recipes.

Vegan Swiss Meringue Buttercream

Preparing the base of cake is easier than preparing the toppings and properly designing it on the top of the base. So, for this event, I prepared the vegan Swiss meringue buttercream. For the ones who are less sweet-tooth but likes to have mild sweet cakes, this is the best recipe for you. You can prepare a healthy base like the rhubarb cake and have this frosting as the topping for the cake. This not only makes it healthy, but also will suit best to your sweet buds.

This dairy-free, egg-free as well as nut-free frosting will give you a flavory and textured cake. Unlike other frostings, this vegan buttercream frosting doesn’t taste super sugary nor does it taste completely sugar-less. For this, I add aquafaba in my frosting that gives that frosting its required sugar levels and it also works as a vegan alternative to eggs. So it works 2-way round.

How to Make Vegan Swiss Meringue Buttercream Frosting

You can also use this buttercream frosting to top on your vegan date pudding. And, of course, you can use it over your cupcakes. It tastes great! This entire process all in all takes 15 minutes. No fuss of a lot of cooking or long time. Because of aquafaba, you get this smooth, simple, and delicious recipe.
