Dairy-Free Sugar Cookies

An all time favorite snack at my place and for many other is here. Although this recipe is not that tough, I preferred having this as my recipe in this event because it is super delicious, soft and chewy and loved by my kids. With this dairy-free sugar cookies recipe is gluten-free and vegan too. It cannot be called healthy, but occasional serving of this dessert is a treat for everyone in the family, be it adults or kids.

While you cook this sugar cookies, it shouldn’t be too sweet which is very important. With the perfect taste, you will want to have these dairy-free cookies more than just in holidays. With vanilla extract, you get a sweet and subtle flavor in your cookies. Although preparation of these cookies is super simple like the vegan date pudding, but the dough of this recipe can be a little time taking.

Dairy-Free and Gluten-Free Sugar Cookies Recipe

Like most of the cookies, chilling doesn’t make any difference to these cookies. So, you can just store them in a jar at room temperature. While you prepare these cookies, you will make use of oil like you use in your vegan Irish Soda Bread, you can use neutral oils like canola oil or any vegetable oil. Let’s have a look at the recipe now

Ingredients

  • 2 & ¾ Cup of All-Purpose Flour
  • ½ Tsp of Baking Powder
  • 1 Tsp of Baking Soda
  • 1 & ½ Cup of White Sugar
  • ½ Cup of Salt
  • ¾ Cup of Oil
  • ½ Cups of Quinoa Flakes (Dissolved)
  • 2 Tsp of Vanilla Extract

Directions

Step 1: Take a large bowl and add all the try ingredients like flour, baking powder, baking soda, salt and sugar

Step 2: Mix all the dry ingredients and whisk them carefully

Step 3: Now add all the wet ingredients to the bowl like oil, quinoa flakes and vanilla extract to the mixed dry ingredients

Step 4: Mix all the ingredients using both your hands in a way that the dough looks dry but must be combined

Step 5: Now, make balls from the dough that are around 1-1 and a half inches long. Now, create a space in between the balls using teaspoons and tablespoon to give a unique shape to the dough. If you want to have different shapes, then just press the dough, take moulds of different shapes and tuck them in the dough to form the shape

Step 6: Then, place a parchment paper or any usable baking sheet in the microwave and let it heat for 10 minutes at 350 degrees Fahrenheit

Step 7: Now, put the cookies dough on the bake sheet and let it heat at 350 degrees Fahrenheit for the next 10 minutes

Step 8: Then, remove the cookies and let it cool for next 3 to 5 minutes

And you are ready with the delightful treat of the tasty cookies. Isn’t that super simple? If you want to try out some healthy recipe, then you can try out the rhubarb cake or Buckwheat Pancakes too.

In this vegan cookie event, I preferred preparing Irish bread instead of some other dessert is because I have seen some of my friends who couldn’t stay put to being vegan as they couldn’t have a vegan bread of their liking. Vegan Buckwheat Pancake Recipe

The most common pancakes are cinnamon pancakes and the buckwheat pancakes. Buckwheat pancakes are the healthiest, vegan and gluten-free one among the most other alternatives of it. Buckwheat gives you fluffy and highly customizable pancakes. You can have it for your brunch, breakfast, snacks or any time of the day with maple syrup poured over it.

You will find a number of pancake mixes in the market. But, they aren’t as healthy and filling as the buckwheat pancakes. These taste quite different from the other pancakes as they are prepared from the buckwheat flour. You can also have them by pouring some vegan custard over it or some Bechamel sauce, both of which enhance the taste of the buckwheat pancakes.

How to Prepare the Buckwheat Pancakes

You will get around 8-11 pancakes with the above mentioned ingredients. If some of you would like to have something more sweet than you can try out the vegan date pudding or if you want to try out a healthy dessert than you can go for the rhubarb cake.
