Vegan Buckwheat Pancake

For the ones who haven’t heard about the term, must be wondering what is buckwheat and how are the pancakes made of it. Here, I will solve all your queries. Buckwheat is a gluten-free seed which as a whole is called buckwheat groats while you can also get them as flour. This buckwheat flour is very healthy as it is high in fiber, requires low amount of sugar to be blended in and have very low amount of carbs in it. This makes our pancakes healthy yet, they are very tasty. Now, Let’s have a look at the recipe of it.

Vegan Buckwheat Pancake Recipe

 1 cup Buckwheat flour
 1 tsp Baking powder
 ¼ tsp Baking Soda
 1 cup Cruelty-free milk (I have used Almond milk here)
 1 tbsp Coconut Oil
 2 tsp Apple Cider Vinegar
 1 tsp Vanilla Extract
 2 tbsp Maple syrup

Take a medium-sized bowl, add almond milk, oil, vanilla extract and maple syrup and keep it aside for some time

Now, take another bowl (larger than the previous one), add buckwheat flour, baking powder and baking soda and blend it well

Once all the dry ingredients are mixed in the large bowl, make a well in the center of the bowl and pour in the mixture prepared in the step 1.

Stir and mix all the ingredients together and make sure there are no lumps in the mixture. This will form a slightly thick batter

Now, take a pancake griddle and let it warm for a minute with oil under medium flame

Now, pour around 1/4th Cup of the prepared pancake mix over the oil and make a round shape of it using your spoon

Let it cook on the griddle till the bubbles are formed and then change the side by moving it upside down (in the initial stage it will take around a minute or 2 to heat and when turned upside down, it takes around half a minute)

Same form you can prepare pancakes with the rest of the batter and pour in some buttercream over it for kids
